Elaboration: Between land and sea, in fact, a privileged terroir for the cultivation of vines for more than 2 millennia, hot and dry summers and winters quite soft. Yields are limited, the grapes obtained are concentrated. Each variety is harvested separately after determining the optimal time. The grapes are destemmed and placed in stainless steel tanks where the maceration will last between 20 and 25 days. Reproduction: 85% of the wine stays at least 6 months in stainless steel vats, 15% of the remaining wine stays at least 6 months in new French oak barrels of 00 liters Weekly batonnages are carried out to keep the lees in suspension while it is in the deposits and in the barrels.

The pre-fermentation maceration is carried out at 8oC for 2-3 hours in a press. The wine is bottled young to preserve its fruity characteristics.

Production: Production Manual harvest in 15 kg boxes. Maceration of the grapes at 5 degrees centigrade for 12 hours. The alcoholic fermentation takes place in stainless steel vats at a controlled temperature
Reproduction: 85% of the wine stays at least 6 months in stainless steel vats, 15% of the remaining wine stays at least 6 months in new French oak barrels of 00 liters Weekly batonnages are carried out to keep the lees in suspension while it is in the deposits and in the barrels.

🇨🇱 MERLOT
Grape variety: 100% Merlot
Farms of Origin: The grapes that make up this Merlot were harvested from vineyards in the Central Valley of Chile.
Elaboration: The juice is fermented for 20 days in stainless steel tanks at temperatures between 10°C and 12°C. Captures the fruity and floral flavors of the varieties. The pre-fermentation maceration is carried out at 8oC for 2-3 hours in a press. The wine is bottled young to preserve its fruity characteristics.
Laurent’s opinion: Intense and brilliant purple color, typical of Merlot. Aromas of dark fruits like plum, blackberry, and blueberry with hints of spice and light toasty notes from the oak.

Farms of origin: The grapes that make up this Chardonnay were harvested from vineyards in the central valley of Chile.
Elaboration: This valley is characterized by well-defined seasons with cold and rainy winters and hot summers where high daytime temperatures are moderated by cold nights. The grapes can ripen properly thanks to the excellent exposure to the sun, the dry summers, and the low rainfall during the harvest.
To capture the fresh, fruity character of Chardonnay, the fruit is carefully pressed. Then, the must ferments in stainless steel tanks at a controlled temperature for optimal extraction of aromas and flavors.
Aging: There is a small percentage that is fermented in French oak barrels to give extra complexity to the final wine.
